Salmon & Vegetable Dinner on the BBQ

This is one of my favourite dinner’s to make. Why? Well, it’s quick and healthy and there’s hardly any clean up. This is because the majority of cooking is done on a BBQ. Here’s how I do it:

Salmon: squeeze fresh lemon juice and sprinkle some sea salt and pepper on your raw piece of salmon. Your clinched fist is a good serving size. Rub olive oil on BBQ grill with paper towel to prevent sticking. Place on BBQ and cook to desired tenderness.

Sweet potatoes (healthy french fries): Slice into long thin pieces. Put these pieces in a mixing bowl. Drizzle with extra virgin olive oil and sprinkle with rosemary and thyme. Mix it all together. Rub olive oil on BBQ grill with paper towel to prevent sticking. Place raw potato pieces on BBQ grill. Cook until dark brown cooking lines from the grill are visible. Flip over each piece and repeat cooking on this side. Sample taste for consistency while cooking. Don’t burn your finger….use a fork. Take the pieces off when you are happy with taste.

Corn: Place fresh corn with husk directly onto the BBQ. Cook for 5 minutes then roll corn to other side and cook for another five minutes. Take off the BBQ and let sit until you are ready to eat. When ready then peel off the husk and enjoy.

Broccoli: Add 1-1.5 inches of water to a pot and bring to a broil. Ideally, place fresh broccoli in a vegetable steamer in the pot. Place the cover on the pot and steam until desired softness is achieved.

Place all food on a plate and eat up.
